Tonight’s dinner was nothing spectacular, but it is new in the blog’s eyes, so I’m counting it. I was supposed to make Red Beans & Rice tonight, but forgot the beans were suppose to soak overnight. I did not have time for that. I grabbed a Hillshire sausage that was in the fridge and all the miscellaneous containers of vegetables I found there too. The sausage cooked in a skillet while I whipped up some instant mashed potatoes and reheated peas, broccoli and greenbeans. The boys were happy because they love sausage and this one happened to be cheese-filled and they got to pick their vegetable. Win-win all around.
