Butterscotch Pudding Cookies

  • 2 sticks of butter, softened
  • ½ c. sugar
  • ½ c. light brown sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 2 ¼ c. flour
  • 1 teaspoon baking soda
  • 1 box butterscotch flavored instant pudding mix
  • ¾ teaspoons salt
  • ½ bag butterscotch chips
Preheat oven to 350F.
In a medium-sized bowl, beat butter and sugars until fluffy. Add in eggs and vanilla. Beat until combined.
In a separate bowl, mix together flour, baking soda and salt. Slowly beat in dry ingredients into wet. Beat in instant pudding mix. Fold in butterscotch chips.
Roll cookies into balls or drop by tablespoon onto baking sheet. Bake for 8-10 minutes.

These smelled incredible during the mixing process. I was really excited about eating them. I am a fan of Oatmeal Scotchies and was hoping for a very similar cookie. These just felt like they were missing something. (Maybe oatmeal?) They taste good, but with the smell, my brain was expecting it’s favored scotchies and that’s not what it received.

Beyond that, if you are not a die hard scotchies fan, these are a good cookie. they were easy to put together. I was fascinated with the idea of putting a pudding mix into a cookie batter.
