Beer Lime Chicken

  • 2 lime, juiced
  • 2 (12 fluid ounce) can light colored beer
  • 2 teaspoons honey
  • 4 cloves garlic, minced
  • 2 teaspoons dried cilantro
  • Salt and pepper
  • 8 skinless, boneless chicken breast halves
In a bowl, mix the lime juice, beer, honey, garlic, cilantro, and salt and pepper until the honey dissolves. Pour the mixture over the chicken, cover and marinate for 30 minutes.
Preheat an outdoor grill for medium heat and lightly oil grate.
Remove chicken from marinade and shake off excess; discard remaining marinade. Grill chicken until tender and juices run clear, about 7 minutes per side.Makes 8 servings

I can’t say I was thrilled with the outcome of this recipe. I don’t blame the recipe however. The hubby grilled this and it took him forever. The chicken was slightly dry. It would be good to try again when we can find some fresh cilantro, every grocery store seemed to be out of fresh cilantro today. Not sure how that happens, but it did. In the end we substituted dried for fresh. Along with the chicken he grilled some potatoes (and his super yummy bacon) as a side. Paired with some watermelon and we had an excellent summer meal. Better then getting the kitchen all warmed since temperatures here hit 100° at some point.
