BBQ Chicken Pizza
- 1 tube crescent rolls
- ½ cup barbecue sauce
- ½ cup diced grilled chicken
- ¼ cup chopped red bell pepper
- ¼ cup chopped green bell pepper
- ¼ cup chopped red onion
- 1 cup shredded Monterey Jack cheese
- ½ cup shredded Cheddar
|Preheat oven to 450°. Arrange unrolled crescent roll dough in a circle or a pizza pan and roll seams closed. Bake for 8 to 10 minutes until light golden in color.|
|Spread with barbecue sauce. Scatter chicken over top. Sprinkle evenly with red pepper, green pepper and onion. Cover with cheese.|
|Bake in oven for 10 to 12 minutes, or until cheese is melted.

A quick and easy dinner for a night we were down in numbers. We seem to be doing a lot of pizza lately. This was a good one. When we grilled chicken for dinner the other night, hubby grilled 2 chicken breast plain with no sauce on them. One was used on this pizza. The other I threw in the freezer for a future dinner. Making this meal even better was the presliced pepper rings I had in the freezer from last summer’s harvest! Less work and less groceries!
