Pepperoni Pizza Wraps


  • 2 tbsp. oil, preferably canola
  • 2 tsp. garlic powder
  • 7 8-inch flour tortillas
  • 1 can prepared pizza sauce
  • 8 oz. mozzarella cheese, shredded
  • 42 thin pepperoni slices
  1. Combine oil with garlic powder; set aside.
  2. Arrange tortillas on work surface. Spread each with 2 tablespoons sauce to within 1-inch of edge. Sprinkle sauce with cheese and top with 6 slices pepperoni.
  3. Roll up tortillas jelly roll style. Heat large skillet over medium heat. Brush wraps with reserved oil mixture. Place wraps seam side down in skillet, in batches if necessary, cook, turning once, until heated through, about 4 minutes per side. Let stand 5 minutes before cutting in half.

Makes 7 rolls

I found this recipe a few years ago and we pull it out every now and again. It is quick and easy, the kids can help make it, and everyone loves it. This week was a low-budget grocery week and this was one of the easy solutions that can feed everybody rather inexpensively. The original recipe only made 4 tortillas, I try to use up the whole tortilla pack. This time around I was left with 1. These would make for a great lunch for the kidlings!
