Cheddar Crusted Asparagus

  • 1 bunch asparagus, trimmed
  • 2 teaspoons olive oil
  • ¼ cup shredded cheddar or Gruyère cheese
  • Pepper

Preheat oven to 450º. Line roasting pan with foil. Arrange asparagus in pan in single layer. Drizzle with olive oil and toss to coat. Roast, shaking pan occasionally, until nearly tender, 10 minutes; sprinkle with cheese and continue roasting until cheese bubble sand crisps on the edges, 2 to 3 minutes. Sprinkle with pepper.

This was our side dish for the Tortellini Alfredo Casserole. A nice and tasty accompaniment. Very simple to prepare, I actually put my husband in charge of this while I fixed the main dish. Neither was going to take very long and I wanted both done at the same time. All four boys ate this asparagus (though the little one did still complain a bit.)
