Spiced Chicken


  • 1 teaspoon ground turmeric
  • ½ teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ¼ teaspoon salt
  • ¼ teaspoon pepper
  • 1 ½ tablespoons flour
  • 4 6-ounce boneless chicken breast halves with skin
  • 1 tablespoon olive oil

On waxed paper, mix spices, flour; coat chicken.

In large nonstick skillet, heat oil. Add chicken; cook 5 minutes per side or until cooked through.

Makes 6 servings

This looked incredible, smelled incredible, and was relatively simple to make. However the end result was disappointing. In this case (unlike the grilling flank steak flop) the blame could possibly be on me. Give me a casserole or ask me to bake something, I do pretty well. Tell me to cook meat, just meat, and I often overcook it. Concerns about having thoroughly cooked meat that won’t make anyone sick makes me over-caution and I tend to cook it to death.
