Dorito Beef Casserole

  • 1 pound ground beef
  • 1 large onion
  • 8 ounces sour cream
  • 8 ounces water
  • 1 can cream of mushroom soup
  • 2 cans mild taco sauce, small cans
  • 2 cans chopped green chilies
  • 1 bag Doritos Tortilla Chips
  • 1 pound cheddar

Brown ground beef and onion. Drain grease off.

Add all ingredients except cheese and doritos.

In casserole dish, place layer of doritos, layer of meat mixture and layer of cheese. Repeat process, ending with layer of cheese.

Bake at 325º for 30 to 45 minutes. May be made ahead of time and put in refrigerator the day before you bake and serve.

This was not a bad casserole. It was selected as tonight’s dinner because son #1 was having a friend over and I thought this would be something that would appeal to a kid for dinner. What kid doesn’t want Doritos in his dinner. For me it was a tad to greasy, for the kids it was awesome. Knowing that we do not always eat the most common foods, I didn’t want to scare the friend away by serving “weird” food. This is a very traditional area, Pennsylvania Dutch cuisine is fairly common. Comfort foods reign. Pizza is typical “I’m having friend’s over” fare.

In the normal scheme of things, I would never have fixed a meal like this. Seriously, Doritios were on sale – for $3.00 a bag! This recipe called for an ENTIRE bag! I cannot imagine what the nutritional values look like. Since it was a special occassion (with 4 boys in the house, it’s not every weekend they have a friend over – we tend to run out of beds) this was the dinner of choice, approved by son #1, so this is what we went with.
