Easy Beef Taco Skillet
- 1 lb. lean (at least 80%) ground beef
- 3 cups hot water
- 1 box Hamburger Helper® crunchy taco
- 1 can (15 oz)
spicychili beans in sauce, undrained
- ⅓ cup milk
- 1 cup shredded lettuce
1 large tomato, chopped (1 cup)
In 10-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
Stir in hot water, sauce mix (from Hamburger Helper box) and beans. Heat to boiling, stirring occasionally. Stir in uncooked rice (from Hamburger Helper box).
Reduce heat; cover and simmer about 25 minutes, stirring occasionally, until rice is tender (sauce will thicken as it stands). Meanwhile, in small bowl, stir milk and topping mix (from Hamburger Helper box) 30 seconds; set aside.
Remove beef mixture from heat. Top each serving with cheese topping, lettuce, tomato and corn chips (from Hamburger Helper box).

It was nice to prepare a box of hamburger helper that made enough to feed all 6 of us. Typically it just barely feeds the boys. This was pretty good on the whole, it was certainly easy enough to make. It was also not too spicy. I used Hormel chili beans, the selection is rather slim at my grocery store. We did not have any tomato on hand, but we did have lettuce. Tomato would have been a nice touch though. Sour cream and some shredded cheese would be a well received addition to the recipe as well. I might suggest buying an extra bag of corn chips as well if you are feeding this to little ones. The little bag that comes in the kit is sure to incite some feuding at the table!
