Panera Cream Cheese Potato Soup

Panera Soup

More soup, delicious, warming, fill-me-up soup! This was easy to make, getting the cream cheese to melt smoothly and not leave little chunks was the hardest part.

  • 4 cups chicken broth
  • 4 cups potatoes, peeled and cubed
  • ¼ cup onion, minced
  • ½ teaspoon seasoning salt
  • ¼ teaspoon white pepper
  • ¼ teaspoon ground red pepper, optional
  • 8 ounces cream cheese, cut into cubes
Combine broth, onion, potatoes and spices. Boil on medium heat until the potatoes are tender. Smash a few of the potatoes to release their starch for thickening. Reduce to low heat.
Add chunked up (softened) cream cheese. Heat, stirring frequently, until cheese melts.
Top with scallions. (optional)

Serves : 4
