Panera Cream Cheese Potato Soup
More soup, delicious, warming, fill-me-up soup! This was easy to make, getting the cream cheese to melt smoothly and not leave little chunks was the hardest part.
- 4 cups chicken broth
- 4 cups potatoes, peeled and cubed
- ¼ cup onion, minced
- ½ teaspoon seasoning salt
- ¼ teaspoon white pepper
- ¼ teaspoon ground red pepper, optional
- 8 ounces cream cheese, cut into cubes
|Combine broth, onion, potatoes and spices. Boil on medium heat until the potatoes are tender. Smash a few of the potatoes to release their starch for thickening. Reduce to low heat.
|Add chunked up (softened) cream cheese. Heat, stirring frequently, until cheese melts.
|Top with scallions. (optional)
