Fold Over Taco Bake
It’s been addressed before, we do not like corn tortillas. I’m not thrilled with stewed tomatoes either (cue horrible elementary school flashbacks), but in a casserole they are manageable. This passed with 3 ★’s likely because it was taco related and the kids love anything that has taco in the name!
- ½ onion, diced
- ½ pound ground meat
- ½ cup enchilada sauce
- 1 14.5 ounce can stewed tomatoes, undrained
- 1 teaspoon ground cumin
- 8 ounces cream cheese
- 1 can diced ortega chilis
corn flour tortillas
- 1 cup jack cheese, shredded
|Preheat oven to 350 degrees.
|Cook onion in pan, add meat, salt and pepper. Drain.
|Add enchilada sauce, tomatoes and cumin. Cook for about 5-10 minutes covered.
|Warm tortillas. Mix cream cheese and ortega chilis, then spread onto warmed tortillas.
|Put half meat mixture on bottom of casserole dish. Fold tortillas in half and lay them on meat mixture. Cover tortillas with rest of meat mixture. Bake covered for 15 minutes.
|Uncover and sprinkle with cheese. Bake for an additional 5-10 minutes or until cheese is melted. Let sit for 10 minutes, then enjoy!
